Cieza peach mousse

Mousse is one of the most desired desserts in summer. Soft and fresh, it is delicious, and in this case it has a special seasoning that gives it an extraordinary spongy touch... clouds!!.. Yes, yes... the candy.

INGREDIENTS

300g chopped and pitted peaches

150g sugar

The juice of 3 lemons

150g clouds

500ml liquid cream

PREPARATION

The first thing is to crush the peach with a blender until it turns into a fine puree.

Heat the lemon juice and sugar in a saucepan until it dissolves, then add the peach puree and the chopped clouds, stirring the mixture until the clouds are completely melted, and letting it cool completely.

With the help of a whisk, whip the cream until it is firm and forms soft peaks (be careful not to overdo it, as it can turn into butter).

We add the peach puree (which is completely cold) to the whipped cream and mix with a spatula with enveloping movements, to ensure that the cream falls as little as possible, until it is completely integrated.

We distribute the mousse into small glasses and refrigerate for 3 – 4 hours.

When serving, decorate with a little whipped cream and a few pieces of peach.

A simple dessert to be luxurious.
